This book explores the role of meat in nomadic diets, contrasting it with grain, which formed the basis of global civilizations' gastronomic systems. The nomadic lifestyle defined their food, and in turn, their diet influenced their way of life. As agricultural and pastoral ethnic groups formed, food became a marker of identity. Nomadic incursions into agricultural regions led to the mingling of peoples and the fusion of agricultural and pastoral elements, predetermining the emergence of the rich gastronomic cultures of the Middle East and Western Asia.
